OUR STORY
Ian Curley, Con Christopoulos, and Joshua Brisbane opened French Saloon in 2016 within the century-old heritage façade of the Kirk’s Bazaar building. Conceived as a symbiotic partner to our downstairs sisters, Le Pub and Kirk’s Wine Bar, the Saloon has spent the last decade evolving alongside the city. Our ethos remains a simple reflection of the spirit of a classic Parisian bistro combined with the contemporary edge of the Melbourne streets we call home—bringing together some of the city's finest chefs to do what they do best.
